Meet the Chef 


Chef Hákon Már Örvarsson will once again have a "pop-up" menu at Hotel Holt in the run-up to Christmas.


Last year, over 700 people came to a "pop-up" party meal at Hotel Holt for Hákon's menu. This year there will be 9 nights available and the party will start on November 30. 


The menu consists of 6 courses and can be enjoyed with a wine pairing or a non-alcoholic beverage pairing.


"I would like to offer a multi-course festive menu with dishes that I have prepared for guests to enjoy in the first year of Christmas. I have chosen excellent ingredients. So is the cooking, the tricks and the representation faithful to me and in my spirit at this time of year. In addition, this is thought of as an evening for a food and wine experience."


Says Hákon, who over the years has won awards for her skills in the kitchen as well here at home as well as abroad. The Bocuse d'Or bronze medal at the time is worth mentioning.


Like last year, Þorri Hringsson will be an artist on hand with a selection of light wines to pair suitable wine with all the dishes on the menu. Þorri has been talking about wine for years and is alone our leading wine expert. He maintains the wine page Víngarður on Facebook.

SCALLOPS

Fresh scallops from westfjord of Iceland „Crudo“ style

Apples, lime, Nordic wasabi, herb-oil, cress, cream



SALMON / STURGEON CAVIAR

Smoky flavored salmon from inland farming. 

Sturgeon caviar, salmon roes, lemongrass, ginger, avocado



STONECRAB 

Stone crab tortellini, bell pepper purée, Bouillabaisse mousse-sauce



BACALAO / FOIE GRAS

Lightly salted cod and duck foie gras. 

Salsaverde, mango glaze, sunflower seeds, celeriac and fresh truffles



PIGEON / FOIE GRAS

Pigeon breast, duck foie gras and fresh truffles baked in puff pastry „En croute“ 

Madeira sauce
